Closer to a very good chicken breast than to anything wild. The sweetness is the surprise — people expect a strong bird and get a delicate one.
- 2Lean, so brine it
There is almost no fat to protect the breast. A couple of hours in salt water is the difference between excellent and dry.
- 3Fast heat, then stop
Hot oven, twenty minutes, out. Chukar punishes the low-and-slow instinct that works on a chicken.

There are no chukar for sale today. The first flock goes to the flock list in order, and pricing is set when that hatch is ready. A $10 refundable deposit per bird holds your place and buys the hatching eggs and feed.

- What does chukar taste like?
- White meat, lean, mild and faintly sweet — much closer to a very good chicken than to a wild bird. It is one of the least gamey game birds on the table.
- How big is a chukar?
- About a pound to a pound and a half live, which dresses out to roughly ten to twelve ounces. That is a generous single portion or a shared first course.
- Why are chukar so expensive elsewhere?
- Almost nobody raises them at small scale. Boutique game birds sell for $40 to $60 a bird in the wholesale-to-chef market, and the specialist houses are routinely sold out.
- How does the flock list work?
- Add your name at cornerharvest.farm/birds. A $10 per bird deposit is optional, refundable at any time, and credited against your first order. Neighbors on the list get first call on every hatch; anything left goes to the greater San Diego community.
